Meal Prep + Clean(er) Eating

At the start of the year, I made a goal to eat more breakfast. I found that the more time I spent prepping on the weekends, the easier it was to eat a healthier breakfast (duh). And when I didn't have time to prep anything on the weekends, I didn't eat breakfast (again, duh). I also found that I often resorted to eggs and roasted veggies for dinner some evenings when I came home starving and wanted food NOW.

I'm curious what your favorite meals are to prep on the weekends, because when I get home at 7 or 8 or 8:30pm after running and yogaing I'm STARVING and I don't want to spend more than 15 minutes throwing some meals together.

HELP.

  1. I cop out a lot on weekend prep: sautee a bunch of peppers and onions and throw them into salads, wraps, and tacos throughout the week. Same goes for pre-crumbling cheese, toasting chickpeas with seasoning, and cooking up chicken.

    If you are feeling slightly more adventurous, you could try cook smarts. They set out your meals for the week; you pick how much you want out of a recipe (2, 4, 8, etc servings); whether you want it regular, veg, or gluten free; and then you are given a grocery list and steps to go all the meal prep on the weekend so the midweek cooking is a breeze. It has really reduced our food waste, increased my eating in at work (yay leftovers), and upped my veggie intake.
